DATES CHUTNEY.('MY VERSION").



Dates - 10 no s
Shallots - 4 to 5 no s
Garlic piece - 3 pods
Green chilly - 3 or 4 no s
Grated Coconut - ½ cup
Vinegar - 1 tsp
Salt - to taste
Curry Leaves - few



How to Prepare:


Chop dates into pieces.
Crush all the ingredients except dates and vinegar.
Add chopped dates and crushed ingredients in a blender and grind it to make a thick paste.
After grinding add vinegar and mix well.
Garnish with curry leaves and green chilly.

MIXED FRUIT PICKLE.



Green Apple - 2 no s
Dates - 10 no s
Cashew Nuts ( broken) - 10 no s
Almonds - 10 no s
Chilly Powder - 3 tsp
Fenugreek Powder - ¼ tsp
Asafoetida - as required
Ginger - a small piece
Garlic - 10 pods
Mustard Seeds - 1 tsp
Vinegar - as required
Water - as required
Gingely Oil - as required
Salt - to taste
Red chilly( broken) - 3 no s
Curry Leaves - as required



How to Prepare:

1. Clean and cut the apples and dates into small pieces and keep cashew nuts almonds (all fruits n dry fruits) aside.
2. Take kadai and heat gingely oil into it and add Mustard seeds, then Red chilly and curry leaves after spluttering it sauté it well then add sliced ginger, garlic and salt sauté it well till it becomes brown in color.
3. When it turns brown reduce the flame in simmer and add chilly powder and mix well and then pour required amount of water and vinegar to make a liquid texture and allow it to boil well.
4. Then add the chopped dates, cashew nuts, almonds and green apple into this and mix along and add fenugreek powder and asfoetida and mix well for 2 minutes.
5. After cooking remove it from fire, and can use hot or can keep it in air tight bottle for use.
6. You can garnish it with slice of green apple and dry fruits like pista nuts etc.
